Ingredients

 4 chicken thighs3 tablespoons lite soy sauce2 tablespoons honey2 tablespoons mirin (or dry sherry or vermouth mixed with 2 teaspoons sugar)1/8 teaspoon pepper (more or less to taste)1-1/2 tablespoons extra virgin olive oil

 
Sauce
  • 2 tablespoons lite soy sauce
  • 2 tablespoons sake (an Asian rice alcohol) or dry sherry or vermouth (optional)
  • 2 tablespoons honey
  • 2 tablespoons mirin (or dry sherry or vermouth mixed with 2 teaspoons sugar)

Directions

In a small bowl, mix the soy sauce, honey, mirin, and pepper.

In a large bowl place the chicken thighs then pour the marinade on them. Leave it between 1 hour to overnight. Overnight gives the best and tastiest result.

To make the sauce, over low heat, in a small saucepan, boil all the ingredients for the sauce for about 5 minutes. Be careful not to burn it.

Grill the chicken on the barbecue grill or oven.

You can also sautè them on a heavy-bottomed saucepan on high flame with little extra virgin olive oil. When the skin becomes dark brown, about a minute, turn to the other side then lower the heat to medium. Be careful not to burn the chicken because the honey makes them burn fast. Cover the pan because the splatters of oil can get very messy.

Baste the chicken with the sauce until cooked through. Start with half of the sauce first so if some remains, you can pour it on the chicken when they are cooked.

Serve with plain steamed brown rice.

Ingredients
  • ½ cup soy sauce
  • ¼ cup chili sauce
  • ¼ cup honey
  • 2 tablespoons vegetable oil
  • 2 tablespoons green onion, finely chopped
  • 1 teaspoon curry powder
  • 1½ lbs boneless pork chops (about 4-6 chops)
 
Instructions
  1. In a gallon-sized resealable bag, add the soy sauce, chili sauce, honey, vegetable oil, green onion, and curry powder and mix until completely combined (I just use my hands and squish it all around in the bag until it's all mixed).
  2. Add in the pork chops, then seal the bag. Place in the fridge for at least 2 hours, but I highly recommend letting them marinade for 6-8 hours (or even overnight!).
  3. Remove bag from fridge, place pork chops on grill over medium high heat and discard marinade. Grill for 6-8 minutes on each side or until the insides of the pork chops are no longer pink.
  4. Enjoy!

Summer Pico deGallo

Basic Pico De Gallo

 Ingredients

  • 4 Roma Tomatoes Diced
  • 1 Small White Onion Diced
  • 1 or 2 Jalapenos, Seeds Removed and Minced (to your taste)
  • 1/4 cup Fresh Cilantro, Finely Chopped
  • 1 tsp Kosher Salt (to your taste)
  •  Juice of 1/4 of a Lime (to your taste)

Cooking Directions

  1. In a medium bowl, add the tomatoes, onion, jalapeno, and cilantro.
  2. Squeeze the juice from 1 lime into the bowl and sprinkle with salt.
  3. Stir to combine ingredients and taste. Add more lime juice and salt as necessary.
  4. Refrigerate and use when you are ready.
  5. Preparation time: 15 minutes
  6. Cook time: 0 minutes
  7. Total time: 15 minutes

Pico De Gallo Recipe as an Appetizer

This was an accidental find, the Wheat Thin Toasted Pita chips have just the right amount of salt on them to accentuate all of the flavors of the Pico De Gallo.

It is wonderful! My parents couldn't get enough of this appetizer.

Pico De Gallo on a Salad

Adding the Pico De Gallo to your salad will spice it up a bit. AND because there are juices from the lime combined with the jalapeños and

tomatoes so there is no need for a dressing of any sort! Healthy, spicy and light makes the perfect summer salad!

Pico De Gallo on Southwestern Chicken

  • 1 tbsp Chili Powder
  • 1 tbsp Ground Cinnamon
  • 1 tbsp Brown Sugar
  • 1 tsp Unsweetened Cocoa Powder
  • 1/2 tsp Salt
  • 1/4 tsp Coarse Black Pepper
  • 3 tbsp Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 3 - 5 Chicken Breasts

Cooking Directions

  1. Combine all of the ingredients.
  2. Put all of the chicken pieces into a gallon zip lock bag and pour the marinade into the bag, rub the marinade into the chicken and let set for 30 minutes. If you let it set for longer than 30 minutes then refrigerate.
  3. Grill the chicken breasts until done (either on an outside grill or inside grill).
  4. Top with Pico De Gallo and serve.

Applesauce Muffins

Can't wait to make these for Avery. 

Ingredients:
 
½ cup butter
½ cup sugar
2 eggs
1 ¾ cups flour
1 tbsp baking powder
½ tsp Salt
 
Topping:
 
¼ cup butter, melted
½ cup sugar
¼ tsp cinnamon
Steps:
Cream butter and sugar.
Beat in eggs one at a time until fluffy.
Add applesauce and mix.
Sift in dry ingredients.
Place in muffin tins and bake at 350 F until golden.
While the muffins are still warm dip in melted butter and then in cinnamon sugar mixture.

Delicious chicken that gets breaded and baked in a sweet and tangy pineapple sauce. It bakes to perfection and is so much better than takeout!

Ingredients
  • 3-4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1½ cup cornstarch
  • 3 eggs, beaten
  • ¼ cup canola oil
  • Sweet Hawaiian Ingredients:
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • ⅓ cup soy sauce
  • 1 teaspoon minced garlic
  • ½ tablespoon cornstarch
  • 1 red pepper chopped
  • 1 (20 oz) can pineapple tidbits, drained
 
Instructions
  1. Preheat oven to 325 degrees. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In separate bowls, place cornstarch and slightly beaten eggs. Dip chicken into cornstarch then coat in egg mixture. (yes you dip the chicken first in the cornstarch. I promise this method is amazing.)
  3. Heat canola oil in a large skillet over medium-high heat and cook chicken until browned. Place the chicken in a 9 x 13 greased baking dish.
  4. In a medium sized mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, minced garlic, and cornstarch. Add the red pepper and pineapple tidbits. Pour over chicken and bake for 1 hour.
  5. I stir the chicken every 15 minutes so that it coated them in the sauce.

Pole Barn/Garage Has Started

One of the areas of the new house that we went back and forth about before making a final decision was the garage. Originally the house had a attached garage built into the plans but as time went on we both realized we wanted a detached garage.  Then we got the quote for the detached garage and realized it was like building a small house and thought that was just a silly use of money so Guy suggested a "pole barn garage".  I knew nothing about them and thought he meant a real barn which I was totally opposed to having (unless it came with goats or horses hehe).   We spent a Saturday afternoon driving into the country where he could show me what they looked like and then when we met with our builder he had one which he allowed us to go in and see.  I was sold, if the price was right.Guy got right on it and found a builder and a quote and it came in at half the price of that detached garage and it was also much bigger so decision was made.Fast forward to this month and the construction has begun.  We decided not to put it on top of the house but instead off to the side.  We literally changed the flow of our driveway to a "Y" with the house to the left and the garage to the right.  This gives us so much more room to park the camper, the extra car and gives Guy his man cave.View of where the pole barn will reside2015-11-13 15.19.22This is where the "Y" splits2015-11-05 15.47.59The driveway to the pole barn2015-11-05 15.48.13View from the "Y" split to the house2015-11-11 14.45.16Once we laid it out the framing was started immediately.
