A Moment of Calm
/Messing around with the iPhone camera settings and was able to capture this moment of calm with Sydney. happens so rarely.
We roadtripped down to Raleigh to celebrate our newest grand-daughter by attending Devon and Bryan’s baby shower.
They are so excited, you can see it in their smiles and laughter.
Can’t wait to meet Audrey in just a few weeks!
These are so good that it is hard to only eat one or two at a time! These are definitely in the rotation.
Made 24, kept in fridge for several days when in a sealed container.
We used Kodiak rolled oats fort added protein and Lily’s no sugar chocolate chips.
12 apples, any combo of choice (Granny, Macs, Yellow Delicious, Gala is best, 3 of each)
Wash and peel all apples, core
Cut up apples, add to pot
Add juice of ½ - 1 lemon along with pulp,
5-6 Tbls sugar or 4 tbsp sugar and 2-4 stevia packs
Dash salt
Dash nutmeg
1 tsp cinnamon
Handful red hots
Add enough apple cider/water to cover and cook until apples are soft, covered, stirring occasionally.
use ½ water and ½ cider
Cook on medium covered pot checking every 15 minutes until apples are soft, not mush
Remove some of the liquid if it is too much and mash down apples with immersion blender or mixer*
Add more of the liquid or seasoning to taste as needed
*I drained and added cooked apples to Vitamix for a quick swirl and let cool before freezing.
