Applesauce Muffins

Can't wait to make these for Avery. 

Ingredients:

½ cup butter

½ cup sugar

2 eggs

¾ cups

Mott’s Natural Applesauce

1 ¾ cups flour

1 tbsp baking powder

½ tsp Salt

Topping:

¼ cup butter, melted

½ cup sugar

¼ tsp cinnamon

Steps:

Cream butter and sugar.

Beat in eggs one at a time until fluffy.

Add applesauce and mix.

Sift in dry ingredients.

Place in muffin tins and bake at 350 F until golden.

While the muffins are still warm dip in melted butter and then in cinnamon sugar mixture.

Sour Cream Raisin Biscuits

How to make Sour Cream Raisin Biscuits:

2 cups all-purpose flour

2 teaspoons baking powder

1/3 cup sugar

1/4 teaspoon cream of tartar

1/4 teaspoon salt

1/2 cup butter, softened

3/4 cup raisins

1/2 cup sour cream

1/2 cup milk

Note: To use a baking mix, replace first 5 ingredients with 2 cups baking mix, adding a tablespoon of sugar.Place first 5 ingredients (or 2 cups of baking mix) in a large bowl and work in the butter with a pastry cutter.Add the raisins next, before adding the milk, to be sure to get them well blended into the mixture.Pour in the sour cream and milk.Knead the dough lightly, adding a little extra flour if needed to keep from sticking.Roll dough out onto a floured surface and cut out your biscuits.

Bake at 450 degrees for 15-20 minutes. These biscuits are so moist with the sour cream, they take a little longer to bake.

There are so many possibilities with these biscuits, of course. Use blueberries or cut-up apples or sliced strawberries instead of raisins! Add nuts! You could also use yogurt instead of sour cream, or use buttermilk. Some yogurt strawberry biscuits sound awfully good to me!

Mom's Banana Bread

Very rarely do you visit my mom and she doesn't serve this banana bread.  Moist, light and yummy.  I promise you will love it as much as we do!

6 very ripe bananas
1 3/4 cup Sugar
1 cup veg. oil
2 large eggs, beaten
1/2 cup Milk
4 cups Flour
4 tsp baking soda
1 tsp salt
1 tsp baking powder
* add 1/2 cup raisins or nuts if desired

Blend bananas, oil & sugar… add eggs.. blend again

Mix flour, salt, soda and baking powder and fold into banana mixture a small amount at a time..alternately add milk… Do not beat
Add raisins or nuts if using

Lightly spray pans and fill with mixture little higher than 1/2 way

Bake at 350 degrees, approx 30-40 minutes. Use toothpick test to determine done-ness.
